That is why you need signed files. Only signed files will be written. First check is signature of file. If file is signed properly only then it will be overwritten. If its not signed with proper keys, then it will just discard it.

it cannot work if you dont get data during a transaction
track 2 of magnetic stripe have 3 different number of emv track 2
first learn how it work to guess how to make an attack
you need data intercepted during a transaction to make a clone of it
go see about SIM REBEL for hardware or get a pos malware like prilex doing the same
in a EMV transaction 20 last transactions are recorded, in NFC is 10 transactions
So how from a magnetic track 2 you get this = no way
analyse a card during a pos transaction or a atm transaction
with malware = ATM(skimer virus), POS(prilex virus)
with hardware = shimmer
after getting that data you can use a software open source like :
OSMOCOM SIM TRACE and GPSHELL
