first learn how it work to guess how to make an attack
you need data intercepted during a transaction to make a clone of it
go see about SIM REBEL for hardware or get a pos malware like prilex doing the same
in a EMV transaction 20 last transactions are recorded, in NFC is 10 transactions
So how from a magnetic track 2 you get this = no way
analyse a card during a pos transaction or a atm transaction
with malware = ATM(skimer virus), POS(prilex virus)
with hardware = shimmer
after getting that data you can use a software open source like :
OSMOCOM SIM TRACE and GPSHELL
