If I can figure out last 3 Digits (780) in that example, then I can easily
create Track1 and Track2
Hint: It's not CVV.. I cannot get it how those digits are generated, based on what?

Theoretically everything is possible, but that not important , you learn while practicing. Trial and error is a fundamental method of problem solving.

True, you cannot generate tracks from card data.
The 3 digits are individually generated based on account numbers, branch number, address etc tags, just depends on which bank uses what tags.
You can crack it though, run through checker if you know that card is good. and you have the format, then just brute check the generated track by manually changing the three digits between 000-999. But to check 1000 combinations, it will cost you 30 cents per checks so $334 roughly in checker. And only the valid one will come out as valid.
You can dop ATM attack also and enter random pin to the track. And swipe at ATM.
All incorrect ones will give invalid card error. The correct track will give INVALID PIN error.
