Can someone please help me understand the difference between a 101 & 201 dump?

It's simple. a 201 service code means it's a card with a chip. 101 service code is a card without a chip.

Simplicity 101 are magstripe 201 is EMV. The carding was great before November 2015 in US.

Yeah I get it's a lot of information on here to read. The problem is getting the correct information and it's always somebody saying something different from the last person or trying to discredit everything all together.
